Ingredients:
200g Pink Oyster mushrooms
6 large eggs
30g parsley, chopped
1 small onion, chopped
1 small tomato, diced
30ml olive oil

Method:
1: Preheat your oven to 180 °C (fan).
2: In an oven-safe skillet, heat 30ml of olive oil over medium heat. Add 1 small chopped onion and 200g of Pink Oyster mushrooms and sauté until the onions become soft and translucent, and the mushrooms are tender and lightly browned.
3. Stir in 1 small diced tomato and cook for an additional 2 minutes.
4. In a bowl, beat 6 large eggs, add 30g of chopped parsley, and season with salt and black pepper.
5. Pour the egg mixture into the skillet, covering the Pink Oyster mushrooms and vegetables.
6. Cook for about 3-4 minutes on the stovetop until the edges are set.
7. Transfer the skillet to the preheated oven and cook for an additional 5-6 minutes until the frittata is set and lightly browned on top.
8. Remove from the oven and let it cool for a few minutes before slicing.
9. Serve your Pink Oyster mushroom frittata hot.
