Ingredients:
200g Lion's Mane mushrooms, shredded
1 small red bell pepper, chopped
1/2 small red onion, chopped
2 cloves garlic, minced
1 large egg
30g breadcrumbs
15ml mayonnaise
5ml Dijon mustard
5ml Worcestershire sauce
30ml vegetable oil
Salt
Pepper
Dips/sauces of your choice
Method:
1: In a skillet, heat 15ml of vegetable oil over medium heat. Add 2 cloves minced garlic, 1 chopped red bell pepper, 1/2 a chopped red onion, and 200g of shredded Lion's Mane mushrooms. Saute for about 10 minutes. Press down on the shredded Lion's Mane mushrooms to draw out moisture.
2: Transfer the cooked mushroom mixture to a bowl and let it cool.
3. In the same bowl and after the mixture has cooled, add 1 large egg, 30g breadcrumbs, 15ml mayonnaise, 5ml Dijon mustard, 5ml Worcestershire sauce, salt, and black pepper. Mix the ingredients until they are well combined.
4. Form the mixture into small 'crab' cakes.
5. In a clean skillet, heat 15ml of vegetable oil over medium-high heat. Fry the 'crab' cakes until they are golden brown on both sides.
6. Once golden brown, place on a plate that has been lined with kitchen roll and let sit for a minute or so.
7. Serve on a plate alongside any dips or sauces of your choice.
