Ingredients:
200g Black Pearl Oyster mushrooms, sliced
1 small red onion, sliced
1 red bell pepper, sliced
2 cloves garlic, minced
6 corn tortillas
30ml vegetable oil
Chilli powder
Cumin
Paprika
Salt
Pepper
Toppings of your choice e.g. avocado, tomatoes, salsa, shredded cheese
Method:
1: In a skillet, heat 30ml of vegetable oil over medium heat.
2: Add 2 cloves of minced garlic, 1 sliced red onion, 1 sliced red bell pepper, and 200g Black Pearl Oyster mushrooms.
3. Sauté for about 10 minutes, until the red onions and the red bell pepper become soft and translucent, and the mushrooms are tender and lightly browned.
4. Season the mixture to taste with chilli powder, cumin, paprika, salt and pepper.
5. Warm 6 corn tortillas in a dry skillet, microwave or oven.
6. Assemble your tacos by filling each tortilla with the taco mixture.
7. Top your tacos with your favourite toppings.
